White teas are different; after harvesting they undergo virtually no processing but are simply withered and dried. They have a superbly subtle taste requiring a subtle palate. Yin Zhen has fine, silvery buds with a delicate and refreshing taste. Plucked by the Imperial method: at dawn on only two days of the year. One of the most glamorous teas in the world. How to prepare Place the tea leaves in the scalded pot or cup. The amount is a matter of taste; say, 3 grams per cup. Add some cold water before adding a small amount of boiling water. This is to keep the temperature below 80 Celsius; green teas should never be subjected to boiling temperature. This subtle tea should be left to steep for longer than green tead:  15 minutes is normally ideal. The first decoction may be either discarded or drunk according to preference.
